John is a fifth generation Scharbauer cattleman who continues his family's ranching legacy of over 140 years in Texas through Midland Meat Company. We are a family-owned and operated butcher shop dedicated to serving the highest quality beef through the pasture to plate philosophy. At Midland Meat Company you can expect the freshest and finest cuts of dry-aged Wagyu-Cross and Angus Hereford beef sourced directly from the historic Scharbauer Ranches.
